At last we have some sunshine here in the UK! To celebrate we are planning cocktails this evening and have been inspired by one of the Basil's Bar guests favourites, the Cucumber and Ginger Mojito....
We have recreated it here and thought we would share the recipe with you - it is the perfect long drink for a summer's evening!
For one delicious cocktail:
60ml your favourite rum (ours is Plantation Three Stars)
25ml sugar syrup
a few mint leaves
generous lime wedge
some sliced cucumber
1" peeled and sliced ginger
Put the measure of rum together with a lime wedge, a couple of cucumber slices, peeled and sliced ginger and some mint leaves into a shaker then, using a spoon, bash all the ingredients around the base to release their flavours and juices into the rum. Pour into a glass over ice, add the sugar syrup, top up with soda and give your cocktail a vigorous stir.
Garnish with cucumber, ginger and mint ... and enjoy!
