Pineapple pancake mustique island style

Ooh, these pancakes not only look scrummy but they are so beautifully presented. Created by Tallulah on Mustique, her inspiration being the exotic fresh fruit on offer - and the sunshine in the sky!

Thank you Tallulah - think we will all be enjoying our own pancakes this evening, but think yours will definitely be the prettiest!

So, to make your pancakes (enough for 6):

100g plain flour

2 large eggs

300ml milk

1 tbsp sunflower or vegetable oil

2 tsp pineapple purée

...then decorate with fresh fruit that you love! Pomegranate seeds are great for a bit of crunch, yummmm!
